  • chef-rene-jwmarriott-hanoi RENE OSKAM Chef Rene was raised in a family with a strong culinary background; his father is a chef while his mother's family is artisan bakers. With the aim of developing high quality authentic experiences at JW Marriott Hanoi, serving best ingredients we can get and introducing new flavors, Chef Rene's aim is to drive the already very accomplished team of chefs to new levels of success.

    For 28 years, Chef Ming satisfied everyone with his amazing culinary wonders, brought authentic Cantonese dishes through Crystal Jade Palace in Indonesia, Fortuna Hotel Hanoi and Crystal Jade Palace Saigon. He started his journey at JW Marriott Hotel Hanoi as Executive Chinese Chef in 2014 with the opening of Crystal Jade Palace Hanoi. And now in the kitchen of John Anthony Cantonese Grill & Dim Sum, Chef Wong Chi Ming puts an inimitable spin on Cantonese classics such as handmade dim sum, roasted meats, and live seafood dishes using progressive cooking techniques.

    "Always listening to the customers" is his motto.

    During his time as a Chef, he never stops enriching and challenging himself in creating new recipes, playing with textures, flavors & "temperatures" while paying attention to details.

    Chef Nulli holds a degree in hotel and restaurant management. Prior to Hanoi, he has worked at 2-star and 3-folk Michelin restaurants and hotels in France, Monaco, Norway and recently Macau.

    During his time as a Chef, he never stops enriching and challenging himself in creating new recipes, playing with textures, flavors & "temperatures" while paying attention to details. Through his own culinary creations, he wants to deliver delicious foods with pleasant sensations, always with the guest experience being the first priority.

    With the passion of discovering new recipe and a sophisticated sense of arts, Chef Nulli surely won't disappoint diners.

    From 11/2017, Chef Manoj is ready to share his expertise and knowledge to bring JW Café guests an exquisite taste of the real India..

    Started working in JW Marriot since 2016, he has a Bachelor of Science from Baekseok Culture University in Culinary Management in Department of Global Internship.

    With all of the experience and his passion for cooking, Chef Min Jun will bring out all the spices and distinctive flavors of Korean Cuisine to our guest.

JW Marriott Hanoi welcomes Chef Rene Oskam with more than 18 years of hands-on experience in International hotels as a new Executive Chef.

Chef Rene was raised in a family with a strong culinary background; his father is a chef while his mother's family is artisan bakers. Executive Chinese Chef - John Anthony Cantonese Grill & Dim Sum

Born in Hongkong, Wong Chi Ming started his career as a commis and gained a lot of experience at the age of 16 in a small restaurant.

For 28 years, Chef Ming satisfied everyone with his amazing culinary wonders, brought authentic Cantonese dishes through Crystal Jade Palace in Indonesia, Fortuna Hotel Hanoi and Crystal Jade Palace Saigon. Joining JW Marriott Hotel Hanoi since pre-opening, the powerful woman is in charge of Pastry Kitchen. 
Chef Trang has nearly 20 years in pastry kitchen. Not only does she hold a diploma in Culinary, but she also has a diploma at Foreign Trade University.
